Banana Stem Yogurt Salad

The juiciness and crunchiness of cooked stem mixed with yogurt make it flavorful and luscious.
What do you need for 4 Servings
1 banana stem
1/2 tsp mustard seeds
1/2 tsp urad dal
1/2 tsp cumin seeds
1/4 tsp hing
3 red or green chilies
Few curry leaves
1 tsp of oil
Yogurt 1 cup
Water as needed
Salt as per taste
Finely chop the onions and slit the chilies.
Remove hard skin layer of the banana stem.
Slice the stems into circular pieces and remove the fiber strands while cutting it. [PIC 1]
Now chop the sliced pieces into small cubes and put them in buttermilk to prevent discoloration.
Swirl it using a skewer stick to remove tangled fiber strands. Repeat this step for 3-4 times. [REF VIDEO]
Add oil in a pan, When its hot add mustard seeds, urad dal, cumin and hing. [PIC 2]
Add chopped onions, sliced chilies, curry leaves and saute it for a minute. [PIC 3]
Drain the buttermilk and add the chopped banana stem. [PIC 4]
Add little water, salt and close the pan with a lid. [PIC 5]
Cook for 10- 12 mins until the stems soften. Stir in between and sprinkle some water if needed. [PIC 6]
Mix the cooked stem cubes with yogurt and garnish with coriander leaves or kaara bondi.
Juicy and Healthy Enjoy!
This recipe can be served as a side dish or as a snack.
You can mix 2 tbsp of yogurt in a bowl of water instead of using buttermilk.
