Brinjal Rice

Brinjal Rice

You might have come across people who hate this vegetable because of its texture and even for its taste.

If you dislike brinjal here is a rice recipe that might intrigue you. It's one of my favorite.

This recipe might give you the impression that a lot of preparation is required. But its lot simpler when you compare it with similar rice dishes.

What do you need for 2-3 servings

Used Measuring (1 Cup = 255 ml)

  • 5 brinjal

  • 1 1/2 cup cooked rice

  • 1 onion

  • 1 tomato

  • 1 tbsp roasted peanuts

  • 1 tbsp gingely oil

  • Salt as per taste

For Dry Roast & Grind

  • 1 tbsp coriander seeds

  • 1 tbsp split bengal gram (chana dal)

  • 3 dried red chili

  • 1 tsp black sesame seeds

  • 3/4 tsp fennel seeds

  • 1/2 tsp cumin seeds

  • 1/2 tsp pepper seeds

  • Few fenegreek seeds

  • 2-3 tbsp coconut

  • 1/2 tbsp roasted peanuts

To Temper

  • 1 tsp mustard & urad dal

  • 1 cinnamon

  • 2 cloves

  • Few curry leaves

Lets Cook

  • Finely chop one onion and tomato.

  • Cut brinjals into small cubes.

  • Dry roast the ingredients one by one under “Roast and Grind” list to make a powder.

  • Heat a pan then add chana dal, dried red chili, coriander seeds, pepper, fenugreek , cumin, fennel and sesame, dry roast it for minute. [PIC 1]

  • Then add coconut and mix, finally add roasted peanuts. [PIC 2]

  • Allow the roasted ingredients to cool down and grind it to semi coarse powder. [PIC 3]

  • Take a bowl and add cut brinjal cubes, 1 tsp salt, ground powder. [PIC 4]

  • Mix them until evenly coated and keep it aside. [PIC 5]

  • Heat sesame oil in a pan. When its hot add mustard, urad dal, cinnamon, cloves, curry leaves, chopped onion and saute until onions are translucent. [PIC 6]

  • Now add Brinjal mixture and give a quick mix. [PIC 7]

  • Cover the pan with a lid and cook for 3 mins. Stir frequently to avoid burning.

  • Add chopped tomato, Mix and cook again for a minute. [PIC 8 & 9]

  • Add 1/2 cup of water and salt. Cook for couple of minutes. [PIC 10]

  • Now add cooked rice and stir gently to mix it. [PIC 11]

  • Keep the flames low, Cover the pan with a lid and cook for a minute.

  • Finally add roasted peanuts and we are done.

Delicious taste with a pleasing aroma, Enjoy!


  • If you are using raw peanuts then add them first while dry roasting.

  • Adjust the spice level by adding or reducing the number of red chilies based on your preference.
