Cauliflower Mushroom Rice
If you are in a hurry to prepare a quick meal this mouthwatering dish is a great choice.
It's simple, tasty, easy to make and also pretty versatile. Want to make it more healthy? Go ahead and add cooked veggies of your choice instead of rice.
Even egg is optional if you prefer a vegetarian option.
What do you need for 2-3 servings
250 gms cauliflower
100 gm mushrooms
1 egg (optional)
1/2 cup cooked rice (optional)
4 garlic cloves
1 tbsp soya sauce
100 ml vegetable broth
1/2 tsp chili flakes
1/2 tsp ground pepper
1 tbsp of oil
Salt as per taste
Cut the cauliflower into medium-sized florets. Cook them in boiling water for a couple of minutes and drain the water.
Allow it to cool down completely and grate it .
Cut the mushrooms roughly.
Grate the carrot.
Finely chop the onion and garlic.
Heat oil in a pan.
Add chili flakes and garlic, Give a quick stir then add onion and saute it for a minute . [PIC 1]
Add celery, saute it for a minute and then add chopped mushrooms. [PIC 2]
Cover the pan with a lid and cook until all the water released by mushrooms evaporates. [PIC 3]
Once all the water is gone add grated cauliflower. [PIC 4]
Mix everything well then put the lid again and cook for 3 minutes. [PIC 5]
Now add grated carrot and mix it. [PIC 6]
Make a small well in the center, Add vegetable broth and soya sauce. [PIC 7]
Mix everything and cook for a minute. [PIC 8]
Crack the egg in the middle and scramble it. [PIC 9]
Finally, add cooked rice and stir until everything mix well. [PIC 10]

You can also pulse cauliflower florets in a food processor or mixie into tiny pieces instead of grating it.
You can also add more veggies of your choice.
