Pan-fried Egg & Avocado
Bread, Cornflakes, Granola, and Oats are modern-day breakfast choices for many. But they get fatigued by these food items and everything starts to taste the same after some time.
Give a break for these regular breakfast foods. Beat the fatigue and treat yourself with a refreshing pan-fried dish that has a blend of healthy ingredients.
What do you need for 2 Servings
2 Ripe Avocados
2 Capsicum
1 Onion
2 Eggs
1 tsp pepper powder
1 tbsp of olive oil
Salt (as per taste)
Lets Cook
Cut the onion and capsicums into cubes.
Cut the Avocado and discard its seeds, peel off the skin and slice it into desired sizes.
Pour oil in a non-stick pan. Keep the flame in medium, Now add the onions and saute it for a minute. [PIC 1]
Set the flame high, Add capsicum and saute if for a minute. [PIC 2]
Lower the flame, Add 1/2 tsp of pepper and a pinch of salt. Mix everything well.
Now make two portions on the pan by separating the capsicum and onions as shown in [PIC 3]
Drop eggs in the middle of the separation and add 1/2 tsp of pepper and a pinch of salt on top of the eggs. [PIC 4]
Cover the pan with a lid and cook for 2 mins.
Now add the sliced avocados and cover the pan with lid again. [PIC 5]
Cook for 30 secs and switch off the flame. [PIC 6]
And its done, Enjoy your healthy breakfast!
Notes
You can also add more veggies like Potato and Carrot.
Capsicum will lose its crunchiness if overcooked.
