Simple side dish cooked with readily available ingredients from your kitchen that's delicious and pairs well with all Indian bread and pulao.
It's also flexible enough to be tweaked to achieve the desired flavors as per your liking.
What do you need for 3-4 servings
2 potatoes - Boiled
2 tbsp grated coconut
1 tbsp kashmiri chili powder
1 tbsp coriander powder
3/4 tsp garam masala
1/4 tsp turmeric powder
1 tsp ginger garlic paste
1 tsp cumin
1 tsp pepper
Few coriander leaves
1 tsp mustard seeds
Few curry leaves
1 tbsp of Oil
Finely chop the onion and tomatoes.
Grind grated coconut, chili powder, coriander powder, garam masala, turmeric, cashew, cumin and pepper. [PIC 1 & 2]
Heat oil in a pan, add mustard seeds, curry leaves followed by chopped onions and cook until they become translucent. [PIC 3]
Add ginger garlic paste and saute it for a minute . [PIC 4]
Add the grinded paste. [PIC 5]
Add required water and cook for 2-3 mins. [PIC 6]
Now add chopped tomatoes and cook until they are mushy. [PIC 7]
Add salt and mix it well.
Add half cup of water or more to get desired consistency. [PIC 8]
Cover the pan with a lid and cook for couple of mins.
Now add mashed boiled potatoes and mix them with masala. [PIC 9 & 10]
Cover the pan with a lid and cook for few mins.
Finally sprinkle some coriander leaves. [PIC 11]
Pairs well with Dosa, Roti & Chapati, Enjoy!
Thickness of the masala can be adjusted by increasing or decreasing the amount of water used .
Normal red chili powder can be used instead of kashmiri chili powder.
