Soya Chunks Masala
Soya chunks are tasteless and have a tendency to absorbs any flavor you throw at it.
This makes it a perfect base ingredient for a tasty side dish.
Let’s make a spicy masala out of this chewy chunks to go with soft chapatis.
What do you need for 3 -4 servings
Used Measuring (1 Cup = 255 ml)
2/3 cup soya chunks
1/2 cup yogurt
3 tbsp besan/Chickpea flour
2 tsp ginger garlic paste
1 tsp red chili powder
3/4 tsp coriander powder
3/4 tsp garam masala powder
1/4 tsp turmeric powder
2 tbsp of oil
1/2 tsp cumin seeds
1/2 tsp fennel seeds
Salt (as per taste)
Take a pan and fill it with 2 cups of water, Bring it to boil and turn off the heat.
Add soya chunks to the hot water and allow it to soak for 10 mins.
Now drain and squeeze all the water out of soya chunks.
Cut 1 onion and capsicum into small cubes.
Finely chop the tomatoes and remaining 2 onions.
In a bowl add yogurt, ginger garlic paste, besan flour, 1/2 tsp of red chili powder, 1/2 tsp of coriander powder, turmeric powder, and garam masala.
Mix everything to make a marinade.
Marinate soya chunks, onion, and capsicum cubes. Keep it aside for 20 mins. [PIC 1]
Heat a tbsp of oil in a pan and add the marinated soya chunks. [PIC 2]
Cook the soya chunks for 10 mins while stirring every 2 mins. [PIC 3 & 4]
Meanwhile, In another pan pour a tbsp of oil and when its hot add cumin and fennel seeds. [PIC 5]
Add finely chopped onions and cook until it becomes translucent. [PIC 6]
Now add finely chopped tomatoes. [PIC 7]
When tomatoes are cooked well add 1/2 tsp of red chili powder, 1/2 tsp of coriander powder and cook for 2 mins. [PIC 8]
Add 2 tbsp of yogurt and stir for a minute. [PIC 9]
Add cooked soya chunks into the gravy and mix everything well. [PIC 10]
Now cover the pan with a lid and cook for 5 mins.

You can also grill the marinated soya chunks along with capsicum and onion.
Besan flour can be replaced with gram flour.
Make sure to cook the marinated soya chunks well to avoid raw smell from the besan flour.
Also while cooking the marinated soya chunks stir frequently to prevent it from burning on the bottom.
